Love it or hate it, #carrot cake is a much loved treat enjoyed by many. I come up with a "healthier " version and for this carrot cake I've used spelt flour,
1 cup wholemeal spelt flour
1 cup white spelt flour
1 tsp soda of bicarbonate
1 tsp ground cinnamon
1/2 tsp nutmeg
1/2 tsp ground cloves
1 cup brown sugar
3 cups grated carrot (approx. 8 medium sized carrot)
1/2 cup chopped walnuts
1/2 cup raisins
1/2 cup shredded coconut
3/4 cup oil ( I used melted coconut oil)
1/4 cup maple syrup *optional
3 free range eggs
250 g mascarpone cream
1/2 tsp cinnamon
2 spoons maple syrup or icing sugar
➡️ Line and grease a 20 cm baking tin and heat your oven to 180 c.
➡️ In a large bowl combine the spelt flour, soda of bicarbonate, salt, spices, sugar, grated carrot, walnuts, raisins and shredded coconut. Mix and stir thoroughly.
➡️ In a large jug or bowl whisk the oil with maple syrup and eggs. Add to the dry ingredients and mix until until you have runny batter. Pour into baking tin and bake for about 40 minutes. Allow to cool completely before topping with mascarpone.
➡️ In a small bowl mix mascarpone cream, cinnamon, zest of orange, maple syrup or sugar and 2 spoons of fresh orange juice. Spread over carrot cake and top with chopped walnuts.
➡️ Serve with a nice cup of tea or coffee.
