Sweet Potato Crinkles
I am making these crinkles quite often, my kids are always hungry now and asking for a treat. These crinkles are addictive :), but without any quilt as they are made with spelt flour and sweet potato. You can freeze them and have them as a healthier oprion snack.
Ingredients:
170g grounded almonds
140g butter
160g brown sugar
150g cooked mashed sweet potato
100g rice flour
110g spelt flour
1 free range egg
juice of one orange
zest of orange
zest of lemon
1 tbsp soda of bicarbonate
1tbsp ceylon cinnamon
1 tbsp cardamon
Preparation:
Cook and mash sweet potato first. In the bowl mix all dry ingredients well. Add all wet ingredients> orange juice, orange & lemon zest, egg and room temperature melted butter and mix well with hand into dough. Place a dough into fridge for 30 minutes. With the fingers make a small balls and press with fingers on the tin. Bake on the greaseproof baking paper and bake at 180 C for about 15 - 18 minutes, depends on the oven.
